Spinach Egg Bites

This egg bite recipe requires no special kitchen appliance - just a couple of mini-muffin tins.

This egg bite recipe, unlike another on Kitchen Tapestry in a recipe called Gadget Grub for Breakfast, requires no special appliance, just a couple of mini-muffin tins. Thus, it allows for making a batch of two dozen egg bites at a time, and is also a sneaky way to get some healthful leafy greens into your kids’ diet. Speaking of which, this recipe was personally approved by my one-year old grandson. The recipe is adaptable for different flavor ingredients, such as bacon bits and cheddar instead of spinach and Gruyère. You could add very finely chopped green bell pepper and even jalapeños for a morning breakfast kick.

Ingredients

  • 8 large eggs
  • 1/2 cup plain Greek Yogurt
  • 1/2 cup shredded combination Gruyère & Swiss cheese (like, Private Selection Alpine Blend)
  • 1/4 cup chopped fresh baby spinach
  • 1/4 tsp onion powder
  • 1/4 tsp fine sea salt
  • 1/4 tsp freshly cracked black pepper
  • butter flavored non-stick cooking spray (like, Pam)

Instructions

  1. Place all ingredients except the spinach into a small food processor or blender. Blend all ingredients on high for one minute, or place all ingredients into a mixing bowl and blend together with a cake mixer on high for three minutes.
  2. Add the spinach and pulse the food processor or blender a couple of times, enough to chop them a bit, but not liquefying them. If you're using a cake mixer, blend in the spinach for 30 seconds or so.
  3. Preheat over to 325°F.
  4. Allow the mixture to sit at room temperature for thirty minutes to an hour.
  5. Liberally spray two 12-count mini-muffin tins with the non-stick spray.
  6. Pour the egg mixture into each muffin well about 80% full.
  7. Place in the middle of the pre-heated over for 18 to 20 minutes or until a knife or toothpick placed in the center of an egg bite comes out clean.

Notes

  • If you're in altitudes above 5,000 feet, cook the egg bites at 335°F for 22-25 minutes.
